White Cabbage Mince Casserole

Ingredients
 

  • 500 g Potatoes
  • 1 size Onion
  • 2 Garlic cloves
  • 2 tbsp Oil
  • 2 tbsp Tomato paste
  • 1 tbsp Paprika pulp
  • 500 g Mixed minced meat
  • 600 g White cabbage
  • 125 g Bacon cubes
  • 100 g Roasted peppers, out of the glass
  • 50 g Butter
  • 40 g Flour
  • 450 ml Milk
  • 2 Eggs
  • 2 tsp Mustard
  • 200 g Grated Gouda
  • Pepper, salt, a pinch of sugar, a pinch of nutmeg

Instructions
 

Preparation of potatoes, meat, cabbage:

  • Boil the potatoes with their skin on in well-salted water. Drain, quench with cold water (this is easier to peel), peel and cut into slices. Keep ready.
  • Peel the onion, cut into fine cubes. Skin the garlic, finely chop. Fry both in the oil in a larger pan. Add tomato and pepper pulp and fry a little. Add the minced meat and stir-fry until crumbly. Pepper and salt, a pinch of sugar.
  • Slice the cabbage into very fine strips and cut them into small pieces if necessary. Put the bacon and 10 g butter in a saucepan and fry well. Then add the cabbage, season with salt, pepper and let everything simmer for about 10 minutes, stirring repeatedly over a mild heat with a covered saucepan. The cabbage should be slightly firm to the bite, but no longer hard. When it's done, fold in the roasted bell pepper, cut into small pieces. Keep ready.

Sauce:

  • Melt 40 g butter in a saucepan. When it starts to puff in lightly, stir in the flour with a whisk until a creamy, thick mass is formed. Reduce the temperature and immediately gradually stir in the milk and continue to stir vigorously until a creamy, lump-free sauce has formed. Season to taste with pepper, salt, mustard, a pinch of sugar and nutmeg and simmer gently for about 5 minutes over a low heat. Then take the pot off the stove for a short time, first stir in 100 g of grated Gouda cheese and then vigorously stir in the eggs, which have been whisked beforehand. If the sauce is too pudding-like, stir in a few more tablespoons of milk.

Completion:

  • Preheat the oven to 200 ° circulating air. Butter a correspondingly large baking dish (approx. 25 x 25) and sprinkle with breadcrumbs. Then it is layered: 1 layer each of potatoes, cabbage, mince, sauce, potatoes, cabbage, mince, sauce, cabbage and, as a conclusion, sauce. Spread the remaining 100 g of grated Gouda cheese on top and place the casserole in the oven for 45 minutes on the middle rack. The cheese should get a nice color. Then it can be served.
