White sausage salad

Ingredients for 4 servings:

  • 400 g radish(s)
  • 500 g white sausage (approx. 4-5 pieces)
  • 2 large onions
  • 3 gherkins
  • 3 tbsp mustard, sweet
  • 4 tbsp white wine vinegar
  • 6 tbsp sunflower oil
  • salt and pepper
  • 1 bunch of chives

Instructions

Working time approx. 15 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 5 minutes

Peel and thinly slice the radish, sprinkle with a little salt, and let it rest for 15 minutes. Cook the white sausages in hot water for about 5 minutes, drain, let it cool, then peel and slice. Cut the onions and gherkins into thin rings or slices. For the dressing, mix the mustard, vinegar, oil, and pepper. Finely chop the chives and add them to the dressing. Mix the sausage, gherkins, radish, and onions and pour the dressing over them. Season with pepper and salt and let the salad rest for about 30 minutes. Serve with pretzels or hearty farmhouse bread.
