White wine cream with peaches and brown rum

Ingredients for 4 servings:

  • 1 large can of peach(s)
  • 2 packs of pudding powder, vanilla
  • ¼ liter white wine, sweet or semi-dry
  • 4 tbsp brown rum
  • 4 tbsp sugar
  • 1 cup of cream
  • 2 packets of vanilla sugar
  • chocolate sprinkles
  • Lemon balm

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 5 minutes; Total time approx. 2 hours 20 minutes

Drain the peach juice and reserve 1/4 l of the juice. Cut the peaches into small cubes. Puree half of the mixture and set aside. Mix the custard powder with a little peach juice and 4 tablespoons of sugar. Combine the remaining juice and wine in a saucepan and heat. Pour in the mixed custard powder while stirring, bring to a boil briefly, and mix with the peach cubes. Stir in the rum. Transfer to a bowl and cover airtight with plastic wrap to prevent a skin from forming. Allow to cool completely. Whip the cream and add the vanilla sugar. Fold into the cold custard and pour the mixture into 4 glasses. Then pour the peach puree onto the cream. Decorate as desired with lemon balm or chocolate sprinkles. We made this cream for Christmas, and all of our guests loved it.
