Whole grain croquettes

Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 eggs, separated
  • 50 g whole wheat flour
  • 2 tsp caraway seeds
  • 1 tsp herbal salt
  • Paprika powder, sweet
  • chili powder
  • nutmeg
  • e.g. breadcrumbs (preferably whole grain)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Boil the potatoes with their skins in a pot with 1 cup of water and 1 teaspoon of caraway seeds. Peel and press through a potato ricer. Let cool slightly, then mix with the wholemeal flour, egg yolks, and seasoning. Form the croquettes. Lightly beat the egg whites and roll the croquettes in them, then coat them in breadcrumbs. Spread on a baking sheet lined with baking paper. Bake on the middle rack of a preheated oven at 180°C (fan oven) until golden brown. This takes 30-45 minutes. Serve hot.
