Whole grain mixed bread à la Tasmia

Ingredients for 1 servings:

  • 400 g flour (wheat flour, type 1050)
  • 400 g flour (rye flour, type 1150)
  • 200 g flour (wholemeal flour or wholemeal groats)
  • 1 tbsp sugar
  • 1 tbsp salt
  • 800 mg water, lukewarm
  • 1 cube of yeast, fresh or 2 sachets of dry yeast

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Combine the flours and sugar and make a well in the center. Dissolve the yeast in the salted water and pour it into the well. Knead everything thoroughly. Turn the dough out onto a floured surface and continue kneading until you have a smooth, non-sticky dough. Place the dough in a 5-liter saucepan. Cover and let it rise for 1.5 hours in a sink filled with warm(!) water. Preheat the oven to 200°C (fan). Remove the lid from the saucepan, place the bread in the oven, and bake for about 1 hour.
