Whole Wheat Bread with Three Seeds

The perfect whole wheat bread with three seeds recipe with a picture and simple step-by-step instructions.

  • 200 g Organic rye flour, fine
  • 400 g Organic whole wheat flour
  • 1 packet Organic dry yeast
  • 2 teaspoon Whole-Food sugar or sugar beet syrup
  • 2 teaspoon Salt
  • 2 teaspoon Organic rapeseed oil
  • 2 tablespoon Organic flaxseed
  • 2 tablespoon Organic quinoa seeds
  • 400 Milliliters Water, lukewarm
  • Flaxseed for the shape
  1. Grind the seeds in the mill or mixer, preheat the oven to 175 degrees.
  2. Put the flour in a large bowl, make a small hollow in the middle. Put the yeast, sugar and a few tablespoons of water in the well and let the yeast mixture rise a little.
  3. Add oil, salt, crushed seeds and the water. Knead the whole thing with the dough hook for a good 5 minutes. The dough is a bit sticky from the oily seeds.
  4. Cover the dough in the bowl and let rise in a warm place for 20-30 minutes.
  5. Knead again thoroughly with the dough hook!
  6. Let rise for another 20-30 minutes!
  7. Coat a loaf pan, 26-30 cm, with oil, sprinkle with linseed or other seeds. Knead the dough and then pour it into the mold. Smooth out with wet hands, finally sprinkle some of the seed on and press down a little.
  8. Let rise again for 10 minutes.
  9. Well, finally the bread comes into the oven preheated to 175 degrees. Place a bowl of water on the bottom of the oven. Bake for an hour. Immediately fall onto a grate or similar. After cooling down a bit, the bread can be enjoyed. Bon bppetit!!
  10. Note! I always give my bread dough enough time to rise, that makes the bread looser!
