Ingredients for 2 servings:
- 150 g pasta (wholemeal spiral pasta)
- 400 g leaf spinach, fresh or frozen
- 2 tomatoes
- 80 g low-fat cheese (Leerdammer Light, Jogging, Limburger Light, etc.)
- 1 onion(s)
- 1 tsp olive oil
- 1 clove(s) garlic, squeezed
- 1 pinch of herbal salt
- 1 pinch(s) of pepper
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes

Cook the pasta according to the instructions. Meanwhile, briefly sauté the finely chopped onion in olive oil in a small saucepan. Add the spinach, chopped tomatoes, and garlic, bring to a boil, and then simmer for a few minutes until the vegetables are tender. Season with herb salt and pepper. Serve on a plate over the pasta and sprinkle with the finely chopped cheese.
