Whole wheat pasta with tomatoes and spinach leaves

Ingredients for 2 servings:

  • 1 onion(s), quartered
  • 2 cloves garlic, finely sliced
  • 2 tomatoes, cut into pieces
  • 1 chili pepper(s), red, dried
  • 1 tbsp olive oil
  • 60 g leaf spinach (frozen, portionable)
  • wine, white
  • Salt
  • nutmeg
  • Sugar
  • Paprika powder, sweet
  • 200 g pasta (wholemeal pasta)
  • possibly water

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the pasta. Heat the olive oil in a pan and sauté the onion, garlic, and chili. Once the onions have taken on some color, add the tomatoes, sauté, and deglaze with white wine (and a little water if needed). Add the spinach, season with salt, nutmeg, paprika, and sugar, and sauté until the spinach is tender. Add a little of the pasta cooking water until the desired creamy consistency is reached. Mix with the whole-wheat pasta and serve sprinkled with freshly grated Parmesan cheese. Tip: Fry the bacon with the onions for a slightly spicier flavor. Refine the sauce with a little milk or cream.
