Whole-wheat teff waffles

Ingredients for 1 servings:

  • 100 g butter or margarine
  • 60 g sugar, max. 80 g
  • 3 eggs
  • ½ tsp, crushed cream of tartar
  • 150 g teff flour
  • 75 ml mineral water
  • 2 tbsp seeds (teff seeds or canihua seeds)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Whisk the eggs until frothy and combine with the slightly melted butter or margarine and sugar. Then add the teff flour, cream of tartar, mineral water, and seeds and stir until a smooth batter forms. Heat the waffle iron and bake waffles in batches. Note: Add a little more batter, as these waffles will rise differently than regular waffles. They also bake longer. Sprinkle with powdered sugar and enjoy, perhaps with gluten-free ice cream.
