Sweets without industrial sugar

Blanch the almonds, peel them, and let them dry. Alternatively, you can use pre-slivered or chopped almonds, which saves you the peeling and drying. Grind the raw cane sugar as finely as possible in a food processor. Grind the almonds in the same way. Mix the almond flour and raw cane sugar. Add honey, rose water, and a few drops of bitter almond oil (to taste) and continue grinding until the marzipan forms a thick mass. Store in an airtight freezer bag in the refrigerator.
