Ingredients for 2 servings:

  • 500 g flour, type 1050
  • 250 g flour (whole wheat flour)
  • 250 g whole grain rye meal
  • 2 packets of dry yeast
  • 30 g salt
  • 30 g syrup, light or dark
  • 30 g oil
  • 650 g water, warm

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Knead everything thoroughly for 10 minutes, cover, and let rise for about 20-30 minutes. Knead again and divide into 4 pieces (for small loaves) or 2 pieces. Shape into rolls and place on a baking sheet. Cover and let rise for another 20-30 minutes. Bake in a preheated oven at 225°C, then reduce the temperature to 190°C after 10 minutes. Bake for about 40 minutes. You can also easily knead in fried onions, sunflower seeds, flaxseed, or herbs.
