Ingredients for 1 servings:

  • 750 g flour (meal), preferably 5-grain meal
  • 1 liter buttermilk
  • 500 g wheat flour (wholemeal)
  • 250 g mixed seeds, e.g. sunflower seeds, pumpkin seeds, linseed, sesame.
  • 4 tsp salt
  • 200 g beet syrup
  • 2 cubes of yeast
  • 150 ml water, lukewarm
  • Margarine, for the mold
  • Oat flakes, for the mold

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 2 hours 25 minutes

a quick recipe for a juicy bread

Combine the bran and buttermilk with the seeds in a bowl and let it sit for about 1 hour. Dissolve the yeast in lukewarm water and add it to the bran along with all the other ingredients. Mix well with a dough hook. Grease two 30 cm long loaf pans and sprinkle with oatmeal. Divide the dough between both pans and sprinkle with oatmeal. Bake at 180°C (top/bottom heat) for about 70 minutes. The bread freezes very well.
