Thaw the wild berries. In a saucepan, combine the fruit wine (varietal to your liking: blueberry, cherry, blackberry, raspberry, strawberry, or blackcurrant), 2 packets of organic bourbon vanilla sugar, 1 1/2 packets of mulled wine quick (depending on your taste; this amount produces a subtle mulled wine flavor), and the gelling sugar. Bring everything to a boil, simmer gently for 3 minutes, stirring occasionally. Remove from heat, add 4-6 tablespoons of crème de cassis (or something similar), and stir. Immediately pour into twist-off jars, tighten the lids, and set aside (approx. 20 minutes).
