Wild, light and delicious

Brown the wild boar with the herb butter. Deglaze with the broth and balsamic vinegar (instead of red wine). Lightly crush the juniper berries, bay leaf, cloves, and pepper in a mortar and pestle and add them to the pan in a spiced egg or tea bag. Simmer over low heat for 1 to 1.5 hours, depending on the quality of the meat. Thicken with the sauce thickener or roux.
