Wild Boar Goulash with Bread Dumplings

Ingredients
 

  • 700 gr Boar back
  • 500 gr Breadcrumbs
  • 1 bunch Parsley
  • Salt, pepper, nutmeg
  • 0,5 liter Milk
  • 1 Red Paprika
  • 1 yellow Paprika
  • 1 orange Paprika
  • 1 Glass Game roast stock
  • 1 Red wine
  • 6 medium sized Eggs
  • 2 size Onion
  • 2 size Oil
  • 2 size Tomato paste

Instructions
 

  • Put the breadcrumbs in a bowl, pour half a liter of lukewarm milk over them and let them steep for 10 minutes. Now add the eggs and the finely chopped parsley and mix well. Season to taste with salt, pepper and nutmeg and leave to rest for 15 minutes. Then shape 12 equal dumplings and chill them a little.
  • Cut the meat and fry it vigorously in a pan with a little oil and season. Then put the meat on a plate, now sauté the onions in the pan until translucent and stir in a little tomato paste, then deglaze with red wine and add the game stock. Now put the meat with the cleaned and diced peppers in the pan and in the oven. Leave the whole thing in the oven for about an hour at 170 degrees (convection). The rest of the wine can be drunk genetically .......! After an hour, put the whole thing back on the stove and simmer gently and season to taste, possibly after seasoning.
  • Put the dumplings in boiling water which we have salted a little and boil. There is also red cabbage or fresh green salad.!
