Wild boar loin sous vide

Ingredients for 2 servings:

  • 400 g wild boar loin
  • 1 tbsp oil
  • 1 tbsp Worcestershire sauce
  • 1 tsp game spice

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 2 hours 10 minutes; Total time approx. 2 hours 15 minutes

Preheat the sous vide cooker to 67°C. Heat the oil in a pan and sear the loin on all sides. Add the Worcestershire sauce to the pan and turn the meat frequently. Remove the meat and rub it with the game seasoning. Place the meat in a vacuum bag and seal it. Let it cook in the sous vide cooker for approximately 2 hours. Then slice the meat thinly.
