Wild boar roast

Ingredients for 2 servings:

  • 900 g wild boar meat, approx.
  • Salt (curing salt)
  • Water
  • Olive oil, for frying
  • 1 onion(s)
  • 2 garlic cloves
  • 50 g nuts, ground
  • 80 g cheese, goat cheese, coarsely grated

Working time approx. 30 minutes; Total time approx. 30 minutes

Cover the meat with water to which a little curing salt has been added for about 36 hours (it will not be fully cooked, but we like it that way), turning occasionally. Rinse the meat, dry it, sear it in olive oil and let it simmer gently in the pot, adding the finely chopped onion and garlic about 20 minutes before the end of the cooking time. Preheat the oven grill. Mix the goat cheese and ground nuts, place the cooked meat on/in a heatproof dish, pour the cheese mixture over the meat and bake for about 10 minutes, the cheese will not run, unless you have butter cheese. We served it with Brussels sprouts tossed in cream and chopped nuts, and jacket potatoes. Serves 2 very good eaters.
