Ingredients for 1 servings:

  • 700 g game meat from fallow deer, red deer or wild boar
  • 300 g pork belly from domestic pigs
  • 1 garlic clove(s)
  • 1 onion(s)
  • 18 g salt
  • 4 g black pepper, ground
  • 1 ½ g marjoram, dried
  • ½ g mace
  • ¼ g rosemary, ground
  • 1 tsp sweet paprika powder
  • 1 egg(s)
  • 2 juniper berries
  • 1 tsp mustard seeds
  • 50 ml red wine
  • Intestines (sheep intestines) for stuffing

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Amount for 1 kg of meat to be processed – adjust spices accordingly

Cut the meat into goulash-sized pieces. Dice the onion and garlic. Put everything through a meat grinder. Grind the juniper berries and mustard seeds and add them along with all the other ingredients. Mix thoroughly. Transfer to the sausage stuffer and fill sausage-sized casings with the mixture.
