Ingredients for 1 servings:
- 700 g game meat from fallow deer, red deer or wild boar
- 300 g pork belly from domestic pigs
- 1 garlic clove(s)
- 1 onion(s)
- 18 g salt
- 4 g black pepper, ground
- 1 ½ g marjoram, dried
- ½ g mace
- ¼ g rosemary, ground
- 1 tsp sweet paprika powder
- 1 egg(s)
- 2 juniper berries
- 1 tsp mustard seeds
- 50 ml red wine
- Intestines (sheep intestines) for stuffing
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Amount for 1 kg of meat to be processed – adjust spices accordingly
Cut the meat into goulash-sized pieces. Dice the onion and garlic. Put everything through a meat grinder. Grind the juniper berries and mustard seeds and add them along with all the other ingredients. Mix thoroughly. Transfer to the sausage stuffer and fill sausage-sized casings with the mixture.
