Ingredients for 1 servings:
- 800 g game meat from fallow deer, red deer or wild boar
- 200 g pork back bacon from domestic pigs
- 18 g curing salt
- 4 g black pepper
- 2 g nutmeg
- 1 g marjoram
- ½ g rosemary
- 1 clove(s) garlic
- Intestines (sheep intestines), caliber 28/30
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Cut the meat into pieces and sprinkle with the spices. Chop the garlic, add it, and grind everything in the meat grinder. Knead everything thoroughly and stuff it into the casings.
