Ingredients for 1 servings:
- 700 g spelt flour
- 1 cube of yeast, fresh
- 1 tsp sugar
- 1 tbsp salt
- 2 tbsp olive oil
- 25 g wild garlic, fresh
- 500 ml water, lukewarm
Instructions
Working time approx. 30 minutes; Rest time approx. 4 hours 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 5 hours 10 minutes
Put the flour in a bowl. Make a well in the middle and crumble in the yeast. Sprinkle sugar over the yeast. Pour about 100 ml of water over the yeast and then mix the yeast, sugar and water with a little flour. Cover and let stand for about 10 minutes. Now add the finely chopped wild garlic, salt, olive oil and the remaining water. Knead everything well until a ball of dough forms. Add a little more flour if necessary. Cover the dough and let it rise for 4-5 hours. Preheat the oven to 200°C. Shape the dough into three logs and place them on a baking sheet lined with baking paper. Moisten the loaves with a little water and bake for 20-30 minutes.
