Ingredients for 1 servings:
- 250 g quark (low-fat quark)
- 10 tbsp buttermilk
- 9 tbsp oil
- 75 g sugar
- 1 tbsp vanilla sugar
- ½ lemon(s), grated peel
- 1 pinch of salt
- 450 g flour
- 1 ½ tbsp baking powder
- 30 g almond(s), flakes
- 1 egg yolk
- Flour , for the work surface
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Combine quark, 9 tablespoons buttermilk, oil, 75g sugar, vanilla sugar, lemon zest, and a pinch of salt. Mix together the flour and baking powder, then stir in about 1/3; knead in the remaining flour. Divide the dough into quarters and roll each into a 40-45cm long rope. Place them side by side and press together at one end. Braid the ropes by placing both outer strands over the two middle strands and then crossing them. Press the ends together and tuck them under. Place the rope on a baking sheet lined with baking paper and bake in a preheated oven (electric oven: 200°C / fan oven: 175°C) for 15-20 minutes. Combine the egg yolk, a pinch of salt, and 1 tablespoon buttermilk. Brush the rope over the loaf and sprinkle with almonds. Then bake for another 15-20 minutes at 175°C (150°C fan oven). Serve with homemade jam or, if you have fresh strawberries, strawberry puree.
