Wild garlic couscous

Ingredients for 6 servings:

  • 200 g couscous
  • 30 leaves of wild garlic
  • 5 large tomatoes
  • 1 onion(s)
  • 50 g walnuts
  • 5 tbsp olive oil
  • ½ lemon(s)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Puree the tomatoes and mix with the olive oil. Add the couscous and let it swell in the refrigerator. Finely chop the onion and wild garlic, crush the walnuts, and mix everything with the couscous. Season with lemon juice, salt, and pepper to taste. Let it sit in the refrigerator until ready to serve. If you like, you can also add a little mint, or you can reduce the amount of wild garlic to keep the tomatoes a bit chunkier. The amount of wild garlic can be adjusted according to taste. It always tastes great with grilled food.
