Wild garlic cream soup

Ingredients for 4 servings:

  • 1 onion(s)
  • 5 handfuls of wild garlic, fresh
  • ¾ liter broth
  • 1 tbsp butter
  • 1 cup crème fraîche
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onion and dice it finely. Wash the wild garlic, pat it dry, and chop it finely. Heat the butter in a saucepan and fry the onion. Then briefly fry the wild garlic. Deglaze with the stock and simmer gently for about 10 minutes. Purée with a hand blender, then add the crème fraîche and seasoning. Bring to a boil again and season to taste.
