Wild garlic soup with tomatoes and cream cheese

Ingredients for 4 servings:

  • 200 g wild garlic
  • 4 spring onions
  • 2 tbsp oil (cold-pressed sunflower oil)
  • 900 ml vegetable stock
  • 150 g cream cheese
  • 250 g tomatoes
  • 2 tbsp sherry
  • salt and pepper

Working time approx. 25 minutes; Total time approx. 25 minutes

A great party dish!

Rinse the wild garlic under lukewarm running water. Remove the roots from the spring onions. Finely slice the wild garlic and finely slice the spring onions. Sauté both in oil for 3 minutes until translucent. Deglaze with vegetable stock and bring the soup to a boil. Stir in the cream cheese and melt it. Deseed the tomatoes, finely dice them, and add them to the soup. Season with sherry, pepper, and salt. Serve with a baguette.
