Wild garlic curd dumplings

Ingredients for 2 servings:

  • 50 g wild garlic, more if desired
  • 250 g quark (cottage cheese)
  • 2 eggs
  • 30 g butter
  • 70 g breadcrumbs
  • some salt and pepper
  • n. B. garlic
  • e.g. Parmesan
  • e.g. butter

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 30 minutes

Wild garlic and quark dumplings

Wash the wild garlic, blanch briefly in salted water, and then rinse with cold water. Squeeze the leaves thoroughly and chop finely. Using a hand mixer, mix the wild garlic with curd cheese, softened butter, egg, breadcrumbs, and any seasoning you like. Chill the mixture in the refrigerator for about an hour; it will be easier to shape. Form the mixture into dumplings, lightly moistening your hands. Simmer the dumplings in boiling salted water for about 12 minutes. Then serve with Parmesan cheese and butter. This mixture makes about 8 smaller dumplings, each about 5 cm in diameter.
