Ingredients for 4 servings:
- 1 handful of wild garlic
- 60 g butter
- 3 eggs, including the yolk
- 150 g semolina
- 60 g breadcrumbs
- ½ pack of baking powder
- 500 g quark
- 3 eggs, of which the egg white
- Salt
- nutmeg
- butter
- Parmesan
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Beat the butter and egg yolks until fluffy. Add all the other ingredients, except the egg whites and wild garlic, and season. Whisk the egg whites until stiff and fold into the mixture. Blanch the wild garlic, squeeze dry, chop, and mix in. Form the mixture into dumplings and simmer gently in salted water for about 15 minutes. Remove from the pan and sprinkle with brown butter and Parmesan cheese.
