Wild garlic dumplings

Ingredients for 2 servings:

  • 300 g potatoes, floury
  • 50 g wild garlic
  • 50 g cream cheese
  • 50 g semolina
  • 2 tbsp potato flour, maybe a little more
  • salt and pepper
  • nutmeg
  • salt water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Boil the potatoes when they’re tender, rinse briefly in cold water, and peel. Immediately press them through a potato ricer or mash them very finely. Purée the wild garlic with the cream cheese to give the dumplings a completely green texture (if you like, you can also roughly chop a few leaves). Add everything to the potatoes along with the remaining ingredients and season well to taste. Knead everything into a smooth dough. If the dough is still too sticky, add a little more potato flour. Shape the dough into small dumplings and cook in boiling salted water. When the dumplings float to the surface, they’re done.
