Ingredients for 1 servings:

  • 1 egg(s)
  • 3 tbsp flour
  • 5 tbsp milk
  • 1 tbsp spice mix (pizza seasoning)
  • 1 pinch of salt
  • 1 tsp sugar
  • 1 cup mixed vegetables, e.g. frozen
  • 4 tbsp tomatoes, chopped, from the can
  • 3 basil leaves
  • 1 handful of grated cheese, e.g. Gouda, mozzarella…
  • some oil
  • some salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

First, crack the egg into a bowl and whisk. Add the flour and milk and mix well. Then add the pizza seasoning, salt, and sugar. Mix everything until you get a smooth batter. Heat a pan, add the oil, and pour the batter into the center. When the bottom of the pan is golden brown, carefully flip the crepe. Season the chopped tomatoes with finely chopped basil, pepper, and salt, and place them on top of the pancake batter. Distribute the vegetables over the crepe and sprinkle with cheese. Cover the pan and cook over medium heat.
