Wild garlic pesto: You need this for the recipe
The pesto does not need many ingredients.
- You need 200 g of wild garlic.
- Measure out 150 to 250 ml of olive oil.
- You also need 50 g of pine nuts or alternatively walnuts.
- For the savory note, use 50g grated Parmesan.
- Seasoned with a teaspoon of salt and a tablespoon of lemon juice.
- You will need a blender to prepare it.
- The finished pesto is filled into sterilized jars with screw caps.
This is how the preparation succeeds
It is very easy to make and doesn’t require any cooking.
- Wash the wild garlic thoroughly and pat the leaves dry. Now the wild garlic goes into the blender together with the pine nuts. Mix the ingredients into a creamy mass.
- Add olive oil, salt, lemon juice, and parmesan. Blend again until creamy. If necessary, add a little more olive oil until the desired consistency is reached.
- Taste everything again.
- Pour the pesto into the prepared jars and smear a 1cm layer of olive oil over the contents.
- Then the pesto keeps closed for about four weeks – but only in the refrigerator.
