Ingredients for 1 servings:
- 1 kg pork belly, fat, boneless
- 20 g salt
- 5 g pepper, white, ground
- 4 g caraway powder
- 4 tbsp wild garlic, chopped
- 1 egg yolk
- 1 dashes lemon juice
- some oil
- Intestine (pig intestine), 28/30 mm
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Mince the pork belly through the middle slice. Puree the wild garlic with oil, adding 4 g of it. Add all the spices, the egg yolk, and the lemon juice, mix thoroughly, and stuff into the casings. Because the egg acts as a thickener, use the sausages within 24 hours. Otherwise, freeze.
