Wild garlic sausage

Ingredients for 1 servings:

  • 1 kg pork belly, fat, boneless
  • 20 g salt
  • 5 g pepper, white, ground
  • 4 g caraway powder
  • 4 tbsp wild garlic, chopped
  • 1 egg yolk
  • 1 dashes lemon juice
  • some oil
  • Intestine (pig intestine), 28/30 mm

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Mince the pork belly through the middle slice. Puree the wild garlic with oil, adding 4 g of it. Add all the spices, the egg yolk, and the lemon juice, mix thoroughly, and stuff into the casings. Because the egg acts as a thickener, use the sausages within 24 hours. Otherwise, freeze.
