Wild garlic soup

Ingredients for 4 servings:

  • 2 onions
  • 30 g butter
  • 1 tbsp flour
  • 500 ml vegetable stock
  • 500 ml milk
  • 2 large potatoes
  • 200 g wild garlic
  • salt and pepper
  • nutmeg
  • 3 tbsp sour cream
  • lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onions and fry in butter. Dust with flour, sauté, pour in the vegetable stock and milk, and bring to a boil. Add the peeled and diced potatoes and cook for about 15 minutes until soft. Puree the soup. Slice the wild garlic crosswise into thin strips, add to the soup, and let it simmer briefly. Add the sour cream and season to taste with pepper, salt, nutmeg, and lemon juice. It tastes especially good served with buttered white bread cubes!
