Wild garlic soup

Ingredients for 5 servings:

  • 2 potatoes
  • ¼ celery root
  • 1 leek(s)
  • 1 carrot(s)
  • 2 spring onions
  • 1 bunch of wild garlic
  • 2 tbsp clarified butter
  • 1 ½ liters vegetable broth, clear or chicken broth
  • 250 g crème fraîche
  • 100 g sweet cream

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the vegetables, peel the potatoes, celery, and carrot, score and wash the leek. Clean the spring onions. Cut everything into small cubes. Melt the clarified butter in a saucepan over high heat and sauté the spring onions until translucent. Then add all the remaining vegetables and fry. Pour in half of the stock and simmer for 15 minutes (speed setting 6). Then add the wild garlic, which has been finely chopped with scissors, and simmer for another 5 minutes. Finally, puree everything with a hand blender until smooth. Add the remaining stock until the desired consistency is reached. Finally, add the crème fraîche and cream.
