Wild Herb Foam Soup

The perfect wild herb foam soup recipe with a picture and simple step-by-step instructions.

  • 4 tbsp Olive oil
  • 100 g Butter
  • 3 Onions
  • 500 g Wild herbs Salad
  • 200 g Oyster mushrooms
  • 100 ml White wine
  • 500 ml Cream
  • 500 ml Vegetable stock
  • Salt and pepper
  • Nutmeg
  • Garlic
  • Olive oil
  • Butter
  • 1 Potato freshly peeled
  1. Finely chop 2 onions, garlic and wild herb salad and sauté with butter and olive oil: Deglaze with white wine and add the stock. Cook for three minutes, mix and strain. Pour cream over the soup and bring it to the boil again. Then season to taste. Thicken with finely grated potatoes and lather again with the magic wand. Cut the mushrooms and the remaining onion into fine strips. Roast the mushrooms in olive oil. Reduce the heat and add the butter and onion strips. Glaze everything together and serve with the soup.
