Ingredients for 2 servings:

  • 1 handful of dandelions
  • 1 handful of sorrel
  • 1 handful of ground elder, goat’s foot
  • 1 handful of daisies
  • 2 tbsp oil (wild herb oil or rapeseed oil)
  • 1 tbsp vinegar (fruit vinegar or apple cider vinegar)
  • 1 tsp mustard, Dijon
  • 1 small shallot(s), finely diced
  • 1 dashes maple syrup
  • 1 tbsp fresh herbs, chopped
  • salt and pepper

Chop dandelion leaves into pieces, remove the stalks from the sorrel and ground elder, wash them thoroughly, and then spin them dry in a salad spinner. Remove the stalks from the daisies and carefully clean them. Make a vinaigrette from the oil, vinegar, and the other ingredients. Mix the wild herbs into it and finally sprinkle the daisies on top. These wild herbs can be found everywhere in nature. Some are even considered weeds, although in my opinion, they don’t deserve that name. You can gather the herbs all year round, except in winter, of course. This way, you’ll always have a delicious, healthy herb salad available as an alternative to leaf salads. However, you should avoid herbs from roadsides near busy streets or dog walking trails.
