Wild herb salad with berry vinaigrette

Ingredients for 4 servings:

  • 1 bunch of dandelion or other salad herbs
  • 150 g lamb’s lettuce
  • 200 g sheep’s cheese
  • 150 g blackberries
  • 10 tbsp oil
  • 4 tbsp vinegar (raspberry vinegar)
  • 4 tbsp sweet cream
  • 4 tbsp jam (wild fruit jelly, e.g. rowan)
  • 2 tsp mustard
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Trim the lettuce and tear it into bite-sized pieces. Arrange on a platter. Crumble the feta cheese and sprinkle it on top. Just before serving, mix a vinaigrette with vinegar, sweet cream, mustard, wild fruit jelly, and oil. Season with salt and pepper, and drizzle over the salad. Garnish with the washed blackberries.
