Ingredients for 1 servings:

  • 400 g carrot(s)
  • 300 g potatoes
  • 60 ml soy milk (soy drink)
  • 1 tsp mustard
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mom’s classic, very tasty

Peel the carrots and potatoes, chop them into pieces, and place them in a pot with just enough water to cover them. Boil the pieces until tender and drain the liquid, reserving a small amount. Mash the vegetables, gradually adding the liquid and soy milk. Toss the carrots with salt, pepper, and mustard.
