Ingredients for 1 servings:

  • 300 g flour
  • 320 g powdered sugar
  • 140 g butter
  • 2 tsp lemon zest, grated (untreated fruit)
  • 1 egg yolk
  • 1 tbsp lemon juice

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Lemon butter cookies with lemon glaze

Knead together flour, 70g powdered sugar, butter, lemon zest, and egg yolk; chill in foil for 60 minutes. Roll out the dough (4mm thick) and cut out stars or snowflakes (snowflakes look best). Place on a baking sheet lined with baking paper. Bake in an oven preheated to 180°C (350°F) for 12-15 minutes, then let cool. Mix the remaining powdered sugar with lemon juice and spread over the cookies. This recipe makes 30 cookies. Optional: Decorate with silver beads, if desired, or draw a striped pattern in the icing with a skewer. You can also drill a hole in each cookie before baking. This allows you to thread a ribbon through the snowflakes and hang them on the tree as Christmas decorations.
