Avocado – Green Apple Tartare

Ingredients for 20 servings:

  • 1 ½ apples (green apple)
  • some water
  • 3 limes, the juice
  • 2 avocados
  • 2 shallots
  • 1 tbsp ginger
  • 6 tbsp olive oil
  • 2 tbsp olive oil, with lime
  • 4 tbsp apple cider vinegar
  • 2 tbsp balsamic vinegar, white
  • 2 tsp salt
  • some pepper, black
  • 2 tsp sugar
  • 1 chili pepper(s), red
  • a few stalks of coriander

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Amuse-bouche

Peel the avocado, remove the pit, and dice (5 mm), then add lime juice to the mixture. Core the green apple and cut into equal-sized cubes. Finely dice the shallots. Finely dice the ginger and the deseeded chili pepper. Combine everything, then add the oils and vinegars and mix well. Season with sugar, salt, and pepper. Finely chop the coriander and fold in. If necessary, drain the tartar before placing it on a spoon or plate, e.g., with a tablespoon. Otherwise, it’s very easy for too much of the marinade (= sauce) to get on top, and it will “soak.” This can be avoided by simply adding the tartar without any sauce and perhaps just basting it with a little of the marinade.
