Ingredients for 4 servings:

  • 50 g ground almonds
  • 1 onion(s)
  • 50 g date(s), dried
  • 6 tbsp white wine vinegar
  • 6 tbsp apple juice
  • 6 tbsp oil
  • Salt and pepper, black
  • 250 g cherry tomatoes
  • 150 g lamb’s lettuce
  • 2 chicory, approx. 300 g each
  • 1 head of radicchio, approx. 300 g

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Salad for the colder season with dates, chicory, lamb’s lettuce and radicchio

Roast the almonds in a pan without oil or fat until golden brown, stirring constantly. Peel the onions and dice them finely. Chop the dates and combine the vinegar, apple juice, and oil. Season generously with salt and pepper. Mix the roasted almonds, onions, dates, and dressing. Trim, wash, and quarter the cherry tomatoes. Wash the lettuce and shake dry. Tear the chicory and radicchio into bite-sized pieces. Mix everything together and serve. Serve with a fresh baguette.
