Sauerkraut salad with pineapple

Ingredients for 2 servings:

  • 400 g sauerkraut (3-minute sauerkraut with bacon)
  • 1 small onion(s)
  • 2 tsp oil (walnut oil)
  • 2 tbsp lemon juice
  • ¼ pineapple (sweet), fresh
  • 10 g walnuts, chopped
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

WW – suitable, 4 P. per portion

Drain the sauerkraut. Peel and finely dice the onion. Halve a quarter of fresh pineapple lengthwise, remove the hard core, and peel. Then cut into small pieces. Place everything in a bowl. Add the walnut oil, lemon juice, salt, pepper, and chopped nuts and mix well.
