Apple-zucchini jam with mint

Ingredients for 1 servings:

  • 500 g zucchini
  • 500 g apples, sour
  • 500 g gelling sugar 2:1
  • 2 tbsp lemon juice
  • 3 leaves mint, fresh
  • 50 g sugar
  • 2 tbsp water

Instructions

Working time approx. 25 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 30 minutes

Roughly dice the zucchini (unpeeled) and chop it with the prepared, cored apples in the food processor (not too finely!). Alternatively, grate the zucchini with the skin on and also the apples with the skin on (by hand or in a food processor). Immediately drizzle with the lemon juice and stir in the gelling sugar. Let it steep for 1 hour. In the meantime, bring 2 tablespoons of water to the boil with the sugar and stir in the finely chopped mint leaves. Bring the zucchini and apple mixture to the boil and simmer for 4 minutes. Stir in the mint syrup and pour everything into prepared jars and screw on the lids tightly. The jam needs to steep first; then it tastes fruity and fresh.
