Wok with shrimp, peppers and mint

Ingredients for 4 servings:

  • 500 g shrimp(s), frozen
  • 2 bell peppers
  • 1 bunch of spring onions
  • 1 pinch(s) coriander powder
  • 8 tbsp olive oil
  • 4 cloves garlic
  • 200 ml chicken stock
  • 3 chili peppers, dried
  • 3 sprigs of mint

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Thaw the shrimp, slice the bell peppers into strips and slice the spring onions into rings. Heat a wok with the olive oil, mince the garlic, and add it. Fry the bell peppers for 1-2 minutes, stirring constantly. Add the spring onions and fry for 1 minute. Add the shrimp, coriander, and chilies to the wok along with the broth and bring to a boil. Stir in the mint sprigs and serve immediately. For the main course, simply prepare and serve with rice or stir-fried noodles.
