Ingredients for 1 servings:
- 200 g whole grain oat flakes
- 70 g pumpkin seeds
- 70 g sunflower seeds
- 70 g flaxseed meal
- 70 g sesame seeds
- 45 g hazelnuts
- 30 g flaxseed
- 20 g chia seeds
- 15 g almonds
- 5 g millet flakes
- 5 g psyllium husk flour
- 1 pinch of salt
- 500 ml water
Instructions
Working time approx. 10 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour 20 minutes; Total time approx. 4 hours 30 minutes
without leavening agent
Mix all ingredients with the water. Let the dough rise for at least 3 hours. Then pour the dough into a bread pan (grease if necessary) and press it down firmly. Preheat the oven to 200 degrees Celsius (top/bottom heat) and place the bread in the still-cold oven. Bake for approximately 80 minutes. Turn the bread out while still hot and let it cool completely before slicing. The bread won’t rise during baking because it doesn’t contain any raising agents, so it will be quite flat. Tip: You can also bake the bread with gluten-free oats or use other nuts.
