Ingredients for 4 servings:

  • 150 g almonds, ground
  • 60 g ground flaxseed
  • 40 g chia seeds, ground
  • 60 g walnuts, roughly chopped
  • 60 g mixed nuts
  • 1 tsp salt
  • 1 tsp baking soda
  • 280 ml water
  • 1 tsp fruit vinegar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 45 minutes

Mix all ingredients, except water and fruit vinegar, well (in a food processor). Bring the water to a boil, add the fruit vinegar and then pour it over the mixture. Mix everything well and shape into a loaf of bread. Place on a baking tray lined with baking paper. Decorate the top with walnuts, then bake in the oven at approx. 180 degrees Celsius for 90 minutes. We have a gas oven, so the temperature information is inaccurate. We have found that it is better to bake the bread not too hot and without fan-assisted baking, but a little longer. The tap test will tell you whether the bread is done. The bread stays fresh at least twice as long as regular bread and should be stored simply in a bread basket without any plastic packaging.
