Ingredients for 1 servings:
- 450 g almonds, peeled, ground
- 225 g sugar
- 10 eggs
- 2 pinches of vanilla powder
- 1 pinch of salt

gluten-free, light yellow, moist and firm cake, without baking powder, for a 26 cm springform pan
Whisk the eggs in a large bowl until frothy. Then mix well with the sugar. Add the ground almonds and vanilla powder. Transfer everything to a buttered 26cm springform pan and bake in a preheated oven at 175°C (350°F) for about 50-60 minutes on the middle rack. Halfway through baking, cover with parchment paper to prevent the cake from overbrowning. Once cooled, sprinkle with powdered sugar and serve with whipped cream, if desired. The cake will be nice and firm, yet moist on the inside.
