Ingredients for 4 servings:

  • 150 g lentils
  • 2 onions
  • 50 g butter
  • 100 g rice
  • 50 g raisins
  • 50 g walnuts, chopped
  • salt and pepper
  • Parsley, chopped
  • Coriander leaves, chopped

Working time approx. 10 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 30 minutes; Total time approx. 8 hours 40 minutes

Armenian lentil soup with rice, raisins and walnuts

Vospapur simply means lentil soup in Armenian, so don’t be surprised if you see other variations offered under the same name. Soak the lentils overnight and cook them in fresh water until half cooked. Dice the onions, fry them in butter until translucent, and add them to the lentils. Add the rice, chopped walnuts, and raisins. Simmer over low heat until both the lentils and rice are tender. The pre-cooking time for the lentils depends on the type of lentil used; 15 minutes worked well for me. Season with salt and pepper and sprinkle with fresh herbs when serving.
