Wraps à la Kathi – Mediterranean

Ingredients for 6 servings:

  • 6 wraps
  • 10 m.-sized tomatoes
  • 3 balls of mozzarella
  • 6 tbsp pesto rosso
  • 1 pot basil, fresh
  • possibly salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wrap with tomato and mozzarella

Cut the tomatoes and mozzarella into very small pieces. Tear or chop the basil leaves into small pieces. In a bowl, mix the chopped tomatoes and mozzarella with about 6 tablespoons of Pesto Rosso and the basil leaves until well blended. Season to taste with salt and pepper. Spread the top of each wrap completely with about 4 tablespoons of the mixture. To make the wrap easier to roll up, don’t put too much topping on the edge of the filled wrap. The easiest way to keep the rolled wrap together is to spread a thin layer of topping on the last end of the wrap, which will help it stick to the rolled wrap. Eat immediately or roll the wraps individually in aluminum foil and refrigerate.
