Yams with scrambled eggs

Ingredients for 4 servings:

  • 1 root(s) (yams)
  • 8 large eggs
  • 3 tbsp oil
  • 1 tsp, leveled salt
  • ½ cube of bouillon
  • 1 pepper, fresh
  • 4 m.-sized tomatoes
  • 1 large onion(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Peel the yam and cut into bite-sized pieces. Boil in a pot of water, just like potatoes. Heat the oil in a pan. Finely chop the tomatoes, onions, and peppers and fry in the hot oil. Season with stock. Whisk the eggs in a bowl and mix in the salt. Then fry them in the pan with the tomato mixture, stirring constantly, until scrambled. Arrange on a platter with the cooked yams and serve hot.
