Ingredients for 4 servings:
- 350 g flour / wheat flour
- 250 g quark (20%)
- 75 ml water (lukewarm)
- 70 g butter (melted)
- 1 tsp lemon(s) – zest, grated
- 2 tsp salt
- 2 tsp sugar
- 20 g yeast (1/2 cube)
- 2 small onions, diced
- 150 g bacon, belly bacon (Gelderland) – diced
- 200 g mixed dried fruit (plums, apples, pears) – diced
- 6 juniper berries, crushed
- 2 bay leaves
- 20 ml port wine
- Clarified butter
Instructions

Chop the dried fruit and pour the port wine over it – marinate for about 2 hours. Drain the quark through a cloth. Put the flour in a bowl. Make a well in the middle, add water, and crumble the yeast into the water. Add the sugar and 3 pinches of salt. Mix lightly and cover with flour. Let the pre-dough rise in a warm place for 30 to 45 minutes. Gently fry the bacon in a little clarified butter or oil and sauté the onions in it until translucent, along with the juniper berries and the bay leaf. Let cool! Mix the pre-dough with the quark and butter to form a dough. Cover and let rest in a warm place for about 15 minutes. Fish out the juniper berries and bay leaves from the bacon and onion mixture. Add the bacon and onion mixture (including all the rendered fat) to the dough, add the dried fruit, mix well, and pour into a loaf pan. Let rise in a warm place for another 2 hours. It can also be prepared well in advance and can be prepared in a good 4 hours! Bake in a preheated oven at 190°C for about 30-45 minutes. Insert a wooden skewer every now and then to test if it’s cooked through. As soon as nothing sticks, it’s done! It’s perfect as a different side dish to duck or goose.
