Yellow beans with brown butter

Ingredients for 4 servings:

  • 500 g wax beans
  • 500 ml vegetable stock, unsalted
  • 3 sprigs savory
  • 1 tsp, levelled white pepper, finely ground
  • n. B. Salt
  • 50 g butter, mildly soured
  • ½ bunch parsley, finely chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Wash the beans and trim the ends. Bring the broth to a boil with the savory, pepper, and salt. Cook the washed and trimmed beans in boiling water for about 15 minutes. Melt the butter in a pan. Drain the beans, remove the savory, and add the beans to the hot butter. Stir the butter several times until the butter slowly browns. Add the parsley to the pan and stir to combine. The butter beans are now ready to serve.
